Cheesy Potato Casserole / Francuski krumpir sa sirom

We still had a bit of leftovers lying around from Easter, so I decided to throw together this easy and delicious dish. You could definitely make this whole thing a lot healthier by including fresh veggies of your choice, but I kinda mostly went for a more decadent experience. We did have the casserole with a big salad on the side, so we were responsible adults after all. 😀

This dish doesn’t really photograph the best, especially once you start digging in and pulling it out of its tray, but it was very tasty, nevertheless.

Unfortunately, we only had new potatoes around, which weren’t really the best choice as it took them a whole century to crisp up. But I wasn’t going to go out to the store just for the sake of picking up perfect potatoes, so it is what it is. I’ve adjusted the baking time in the recipe to accommodate regular potatoes, as those would work out the best. However, please stay safe and work with what you have at home.

INGREDIENTS:

(Yields 6 servings / 1.11 EUR per serving / 6.65 EUR for all)

3 tbsp sunflower seed oil (0.04 EUR)

10 medium-sized potatoes (1.33 EUR)

5 hard-boiled eggs (1.00 EUR)

1 cup diced ham (2.00 EUR)

METHOD:

Cook the whole potatoes in their skins for about 15 minutes until they are half-done. Allow them to cool a bit, then peel and cut into thin coins. Cut the boiled eggs into coins as well.

Preheat the oven to 200°C and lightly grease a casserole dish or a square baking pan with a bit of oil. Layer half of the potatoes on the bottom of prepared pan, then top with eggs, ham and cheese (reserve about a cup of cheese for later). Drizzle a bit of oil and season everything well with salt, pepper and oregano. In a small bowl, whisk together sour cream and the eggs, then dollop the mixture over ingredients in your casserole. Top everything with more potatoes, drizzle more oil, season the top layer with salt, pepper and oregano, dollop cream mixture and scatter a bit of ham on top of everything. You could definitely make even more layers, but I was kinda lazy, hah!

Bake for about 30-40 minutes, until crispy and golden brown on top. Top with reserved cheese, then finish baking for just another five minutes. Serve warm with a big salad of your choice.

Imali smo po doma još nekih ostataka koji su nam preostali od Uskrsa, tako da sam odlučila smućkati ovo brzo i jednostavno jelo. Francuski krumpir biste definitivno mogli napraviti u nekoj zdravijoj varijanti ako bi ste unutra ubacili i neko svježe povrće, međutim ja sam više išla na čistu dekadenciju. Iako, imali smo uz ovo i veliku šarenu salatu, tako da smo ipak mogli proći pod odgovorne odrasle osobe. 😀

Ovo jelo definitivno nije najfotogeničnije, posebno kada sve raskopate i izvadite na tanjure. Ali je neovisno o tome, jako jako ukusno.

Na žalost, doma smo imali jedino mlade krumpire koji se i nisu baš pokazali idealnima, jer im je trebalo cijelo stoljeće da se bar malo zahrskaju. Međutim, nisam planirala izaći iz kuće samo zato da bi si u dućanu kupila savršeni krumpir, tako da sam se snašla sa onime što je već bilo pri ruci. Niže u receptu sam prilagodila vrijeme pečenja tako da odgovara običnim krumpirima. No i vi isto pazite na sebe i ne izlazite nikuda ako ne morate, već improvizirajte sa onime što već imate kod sebe.

PRIPREMA:

Neoguljene krumpire kuhajte cijele u vodi 15-tak minuta, dok ne budu na pola skuhani. Pustite ih da se malo ohlade, pa ih ogulite i narežite na tanke novčiće. Kuhana jaja također narežite na novčiće.

Pećnicu zagrijte na 200°C te protvan za pečenje lagano namastite sa malo ulja. Pola krumpira posložite po dnu protvana, pa po njima rasporedite jaja, šunku i sir (s tima da oko šalicu sira sačuvajte za kasnije). Sve pokapajte sa malo ulja i dobro začinite solju, paprom i origanom. U maloj zdjelici razmutite vrhnje sa svježim jajima, pa tu smjesu pokapajte po sastojcima u protvanu. Sada poslažite po svemu ostatak krumpira, opet začinite uljem, solju, paprom i origanom, pokapajte ostatak smjese od vrhnja, te još po svemu raštrkajte malo šunke. Definitivno možete sve slagati u još više slojeva, ali ja sam bila lijena, haha.

Pecite sve 30-40 minuta, da se krumpiri zahrskaju i dobiju zlatnu koricu. Posipajte po svemu sir koji ste sačuvali i vratite u pećnicu na još samo pet minuta. Poslužite toplo sa velikom salatom po vašem izboru.

Ham, Egg and Cheese Breakfast Wraps / Zamotuljci sa šunkom, jajima i sirom

My, oh my, these wraps are truly a breakfast of the champions. They are super delicious and filling and can be made ahead of time and just reheated as needed. Since they make for a pretty big breakfast, they are a fantastic option when you’ll need more energy in the mornings. I actually had one of these before a pretty big hike and it kept me energized and satiated for the whole day.

INGREDIENTS:

2 tbsp sunflower seed oil (0.03 EUR)

METHOD:

Preheat the oven to 180°C and line a baking sheet with parchment paper. Finely dice the onion on green pepper. Whisk the eggs with salt and black pepper. Place a skillet on medium heat. Add in the oil and sauté the onion and green pepper for about five minutes, until slightly caramelized. Pour in the whisked eggs and cook for about 1-2 minutes, while gently folding. Once the eggs are done, turn off heat and assemble the wraps.

Add two slices of ham to each tortilla. Top with the egg and sprinkle with shredded cheese. Wrap up and place on a prepared baking sheet. Bake for about 10-15 minutes, until the tortillas slightly crisp up. If you are making these ahead of time, just wrap them tightly in aluminum foil before baking and refrigerate. When the wraps are crisped up to your liking, serve them immediately drizzled generously with Sriracha or any other hot sauce of your choice.

Evo vam baš jedan pravi doručak pobjednika. Ovi su zamotuljci jako ukusni i zasitni, a što je najbolje, mogu se pripremiti i unaprijed pa onda samo ugrijati po potrebi. Obzirom kako je ovo poprilično bogat doručak, odličnan je izbor za one dane kada ćete ujutro trebati više energije. Ja sam krknula jedan zamotuljak prije jednog žustrijeg planinarenja i zasitio me i napunio energijom za cijeli dan.

PRIPREMA:

Zagrijte pećnicu na 180°C i obložite protvan papirom za pečenje. Fino nasjeckajte luk i papriku. Jaja razmutite sa solju i paprom. Tavu stavite na srednju vatru pa dodajte u nju ulje i oko pet minuta dinstajte luk i papriku, sve dok se blago ne karameliziraju. Ulijte u tavu razmućena jaja te ih kuhajte 1-2 minute dok ih lagano preklapate špatulom. Kada su jaja gotova maknite sve sa vatre i složite zamotuljke.

Na svaku tortilju stavite dvije šnite šunke. Dodajte jaja, pa posipajte sa ribanim sirom. Složite svaku tortilju u zamotuljak, te stavite na pripremljen protvan. Pecite 10-15 minuta, dok se tortilje lagano ne zahrskaju. Ako pripremate zamotuljke unaprijed, samo ih prije pečenja dobro umotajte u aluminijsku foliju i čuvajte u hladnjaku, pa onda kasnije zapecite. Kada se zamotuljci zapeku po vašem ukusu, odmah ih poslužite obilno pokapane Srirachom ili kojim drugim ljutim umakom po vašem izboru.

Bacon and Zucchini Fried Rice / Pržena riža sa slaninom i tikvicama

Yes, I know; another fried rice recipe! But since that’s such an awesome way for using up random stuff in your fridge, I don’t plan to stop anytime soon. Sorry – not sorry. I happened to have a small, lonely piece of bacon in my fridge and decided to use it up in this recipe too. And since everything with bacon tastes amazing, this dish turned out quite delicious.

METHOD:

Wash, peel and thinly slice all the veggies and mushrooms. Whisk the eggs in a small bowl and set aside. Place a deep pan or a wok on high heat and allow to thoroughly warm up. Add in a tablespoon of oil and the bacon, then cook for a few minutes until the bacon starts lightly crisping up. Now throw in chopped up carrot, bell pepper, onion and garlic. Cook until the veggies start to slightly caramelizing before adding in the mushrooms and zucchini. Give those another few minutes, so most of the water evaporates.

Push everything to one side of your pan and add the remaining tablespoon of oil to the empty wok bottom. Turn the whisked eggs out on the oil and cook for a minute or two, while gently folding them over with a spatula. Once the eggs are cooked through, give a good stir and add in the rice, Gochujang, ketchup, soy sauce, fish sauce and sesame oil. Stir-fry for a few more minutes, until the rice slightly crisps up. Serve immediately.

Da, da, sve znam; još jedan recept za prženu rižu! Ali pošto je to tako savršen način za iskoristiti sve ostatke koji su vam se nakupili u frižideru, uopće ne planiram s time prestati. Žao mi je, ali nije mi žao. Uz sve ostale sastojke, imala sam u frižideru i tužni, usamljeni komadić špeka koji sam također odlučila ubaciti u recept. A pošto sve sa špekom ima savršen okus, ovo je jelo također ispalo odlično.

Dodajte žlicu ulja, pa par minuta kuhajte slaninu da se lagano zahrska. Sada dodajte nasjeckanu mrkvu, papriku, luk i češnjak. Kuhajte uz povremeno miješanje dok se povrće ne počne blago karamelizirati prije nego ubacite gljive i tikvicu. Ostavite još koju minutu, tako da većina vode ispari.

Špatulom sve pogurajte na jednu stranu woka i oslobodite dno. Na tako prazno dno dodajte preostalu žlicu ulja pa na ulje iskrenite razmućena jaja. Kuhajte ih koju minutu, uz nježno presavijanje špatulom. Kada ju jaja gotova, sve dobro promiješajte i ubacite rižu, Gochujang, kečap, soja sos, riblji umak i sezamovo ulje. Kuhajte sve uz povremeno miješanje još nekoliko minuta, sve dok se riža blago ne zahrska. Poslužite odmah.

Give everything a good stir and cook for a minute so the spices warm up and get fragrant.

Push everything to one side of your pan and add the remaining sunflower seed oil to the empty bottom. Turn the whisked eggs over on oil and cook for a minute or two, while gently folding them over with a spatula. Once the eggs are cooked through, give a good stir and add in the rice, tomato sauce and sesame oil. Stir-fry for a few more minutes, until the rice slightly crisps up. Serve immediately.

Prije nego što ćete dodati jaja, ubacite češnjak, đumbir, čili, papar, šećer i sol. Sve dobro promiješajte i kuhajte samo minutu, da se začini ugriju i zamiriše.

Sve sastojke pogurajte na jednu stranu woka, pa onda na prazno dno ulijete preostalu žlicu ulja i na ulje iskrenite razmućena jaja. Nježno jaja minutu-dvije preklapajte špatulom dok se do kraja ne skuhaju. Kada su jaja gotova, sve dobro promiješajte pa dodajte u sve rižu, umak od rajčice, soja sos i sezamovo ulje. Kuhajte uz povremeno miješanje još par minuta, dok se riža blago ne zahrska. Poslužite odmah.

Fried rice is one of my favorite dishes because it’s very quick and versatile. It’s a fabulous way to use up some odds and ends you have rolling around your fridge. Also, it’s sooo tasty. I could eat fried rice pretty much every day and never get tire of it.

INGREDIENTS:

For the sauce:

1 tsp Gochujang – Korean chili paste (0.07 EUR)

METHOD:

First make the sauce by whisking together all of the ingredients until it’s all well incorporated and dissolved. Set aside. Wash, peel and finely dice all the veggies and mushrooms. In a small bowl whisk the eggs.

Add two tablespoons of sunflower seed oil to a wok or a pan on high heat and saute onion for a few minutes, until slightly translucent. Add in oyster mushrooms, cook briefly and then add in the Portobello mushrooms. After a minute or two dump in bell pepper and minced garlic. Stir-fry for a couple of minutes before adding in carrots. Once it all cooks down, push everything to one side, scraping the bottom of the pan clean.

Pour the remaining two tablespoons of oil to the free pan bottom, then add in whisked eggs to the oil. Cook the eggs for a minute or two, gently folding them over with a spatula until they are done. Stir everything together and add in the rice. Allow to reheat and slightly crisp up for a few minutes before pouring the sauce over everything. Give a good stir and serve immediately, sprinkled with sesame seeds.

Pržena riža mi je jedno od omiljenih jela jer je jako brza za spremiti i vrlo prilagodljiva. Ujedno je i super za iskoristiti sve ostatke koji vam se kotrljaju po frižideru. A da ne spominjem činjenicu koliko je samo fina. Što se mene tiče, prženu rižu mogu jesti svaki dan i nikada mi neće dosaditi.

PRIPREMA:

Prvo spremite umak tako da u maloj posudi dobro izmiješate sve sastojke dok se sve ne rastopi i sjedini. Stavite na stranu. Operite, ogulite i fino nasjeckajte svo povrće i gljive. U maloj zdjelici razmutite jaja.

Dvije žlice suncokreovog ulja dodajte u wok ili tavu, pa na jakoj vatri kratko prodinstajte luk dok ne postane staklast. Ubacite bukovače, kratko kuhajte, te dodajte i šampinjone. Nakon minutu-dvije dodajte papriku i sjeckani češnjak. Kuhajte uz miješanje nekoliko minuta prije nego što ubacite i mrkvu. Kada se sve kratko prokuha, pogurajte svo povrće i gljive na jednu stranu tave i dobro postružite sve sa dna.

Preostale dvije žlice ulja dodajte na prazni dio tave pa direktno na ulje ulijte razmućena jaja. Minutu-dvije kuhajte jaja, s time da ih špatulom nježno preklapajte sve dok ne budu gotova. Sada sve promiješajte te dodajte rižu. Pustite koju minutu da se riža ugrije i da se blago zahrska prije nego što sve zalijete pripremljenim umakom. Još jednom dobro promiješajte i odmah poslužite, posipano sezamom.

I started work again last week after my three week summer vacation. Needless to say, that’s always fun. The most challenging thing was to plug into the new routine. I miss my slow mornings the most, as I always take my time in the morning on my days off. To compensate for this and free up some more space in the afternoons, I bring you a super quick, yet delicious dinner recipe.

Green tomatoes give a really delicious and interesting kick, so I suggest using them while they are still available. I also had some roasted red horn peppers lying around and decided to throw in those. METHOD:

Wash, peel and finely dice all the veggies. Place a deeper skillet on high heat, add in olive oil and diced onion, then sauté for a few minutes until the onion starts browning slightly. Throw in dried chili flakes and stir for a few seconds, so the flavors release into the oil. Dump in diced green tomatoes, minced garlic and fresh horn pepper, if using. If, on the other hand, going with the roasted peppers, add them in together with Roma tomatoes, when green tomatoes are cooked through and most of the liquid has evaporated. After 5-10 minutes, throw in canned Roma tomatoes, basil, parsley, salt and pepper. Give a good stir, reduce heat to medium and cook for about 10 minutes, until sauce is thickened.

Make four small wells in the sauce with a spoon and break the eggs into the wells. Reduce heat to low, cover the skillet with a lid and cook covered for 7-10 minutes, until the egg whites are thoroughly cooked through, but the yolks are still runny. Resist the urge to open the lid too often so the steam doesn’t escape, as that’s what’s gonna cook the eggs. When eggs are done, gently break the whites into the sauce with a spatula, but leave the yolks intact. Crumble feta on top and serve Shakshuka with a nice hunk of crispy bread for dipping. We also like it over cooked rice.

Prošli sam tjedan ponovo krenula raditi nakon trotjednog ljetnog godišnjeg odmora. Naravno, takav povratak na posao je uvijek jedno divno iskustvo. Najteže od svega mi je palo ponovo se prištekati na novu rutinu, a najviše su mi falila spora jutra. Da nekako kompenziram i oslobodim mjesta poslije podne, donosim vam ovaj brzi, ali jako fini recept.

Zelene rajčice daju jedan jako ukusan i zanimljiv štih, pa predlažem da ih upotrijebite dok se još mogu naći za kupiti. Također, imala sam pri ruci i nešto pečenih paprika roga, pa sam odlučila i njih ubaciti. Naravno, možete ih zamijeniti sa svježima, samo će im trebati malo duže kuhanja, pa njih onda dodajte skupa sa zelenim rajčicama.

PRIPREMA:

Operite, ogulite i fino nasjeckajte povrće. Stavite dublju tavu na jaku vatru, dodajte maslinovo ulje i sjeckani luk, pa dinstajte par minuta dok se luk ne počne lagano karamelizirati. Ubacite sušeni chili i par sekundi miješajte, da se arome otpuste u ulje. Ubacite sjeckane zelene rajčice, češnjak i svježu papriku, ako nju koristite. Ako se, s druge strane, odlučite na pečenu papriku, dodajte ju skupa sa pelatima, kada se zelene rajčice blago iskuhaju i većina tekućine je isparila. Nakon 5-10 minuta ubacite pelate, bosiljak, peršin, sol i papar. Dobro promiješajte, smanjite vatru na srednje jaku i kuhajte desetak minuta, dok se umak ne zgusne.

Žlicom napravite četiri udubljenja u umaku i unutra razbijte jaja. Smanjite vatru na nisku, poklopite tavu i kuhajte 7-10 minuta da se bjelanjci skroz skuhaju, ali žutanjci i dalje ostanu tekući. Nemojte stalno skidati poklopac da vam ne pobjegne sva para, obzirom kako će ona skuhati jaja. Kada su jaja gotova, bjelanjke špatulom lagano razbijte u umak, ali žutanjke ostavite cijele. Namrvite fetu po svemu i poslužite Shakshuku sa komadom finog hruskavog kruha za umakanje. Nama je također super i sa kuhanom rižom.

INGREDIENTS:

(Yields 2 servings / 1.26 EUR per serving / 2.51 EUR for all)

3 tbsp sunflower seed oil, divided (0.04 EUR)

2 red horn peppers (1.00 EUR)

3 garlic cloves (0.10 EUR)

Pinch red pepper flakes (0.03 EUR)

1 small onion (0.07 EUR)

Half a cup of precooked chicken chunks (0.67 EUR)

2 cups precooked rice (0.20 EUR)

1 egg (0.20 EUR)

2 tbsp soy sauce (0.13 EUR)

1 tsp roasted sesame oil (0.07 EUR)

METHOD:

Wash, peel chop up peppers, garlic and onion. Whisk the egg in a small bowl. Place wok on high heat for a few minutes to thoroughly heat through. To a hot wok add 1 tablespoon of oil, chopped peppers, garlic and red pepper flakes and stir-fry for a couple of minutes. Then dump in the onion and precooked chicken chunks and stir-fry for another few minutes. Add in another tablespoon of oil and precooked rice, stir to combine and briefly cook.

Move everything to one side of the wok, add remaining tablespoon of oil to empty part of the wok bottom and pour whisked egg into oil. Briefly cook the egg, folding it with your spatula. Break the cooked egg into smaller chunks, pour soy sauce and sesame oil over rice and stir until everything is combined. Serve immediately.

PRIPREMA:

Operite, ogulite i narežite paprike, češnjak i luk. Razmutite jaje u maloj zdjelici. Stavite wok na par minuta na jaku vatru da se dobro ugrije. U vrući wok dodajte jednu žlicu ulja i narezane paprike, češnjak i chili, pa pržite uz miješanje par minuta. Ubacite unutra luk i komadiće piletine pa kuhajte i miješajte još koju minutu. Dodajte još žlicu ulja, kuhanu rižu, dobro promiješajte i kratko kuhajte.

Pomaknite sve na jednu stranu woka, pa na prazni dio dna dodajte preostalu žlicu ulja. Izlijte razmućeno jaje na ulje i kratko ga pržite, s time da ga nježno preklapate špatulom. Gotovo jaje razlomite na manje komade, prelijte soja sos i sezamovo ulje preko riže i onda sve dobro promiješajte. Poslužite odmah.

I lucked out and scored some avocados on sale, so I’ve decided to make a quick guacamole. Throw in an egg, and you have a healthy, simple and delicious lunch.

INGREDIENTS:

½ avocado (0.33 EUR)

½ small onion, diced (0.03 EUR)

2 garlic cloves, minced (0.03 EUR)

METHOD:

Make the guac by crushing peeled avocado with a fork. Stir in diced onion, minced garlic, diced cherry tomatoes, lemon juice, chopped parsley, salt and pepper. Taste and adjust seasoning, then set aside.

In a bowl whisk an egg with a teaspoon of cold water and pinch of salt and pepper. Add butter to a pan set on medium heat. Once the butter melts, swish around the pan, so it gets coated evenly. Pour in the whisked egg so it’s distributed in a thin and even layer, then sprinkle with shredded cheese. Cook for about two minutes, until the bottom of the egg starts getting golden-brown and the top with the cheese is just set. Fold the omelette in half, press it down with a spatula and remove from heat.

To assemble the sandwiches, cut the omelette in half and place each half over a slice of toasted bread. Dollop with guacamole and serve immediately.

Posrećilo mi se pa sam uspjela naletiti na avokado na akciji i odlučila sam se za brzinski guacamole. Ubacite još i jaje, pa imate zdravi, jednostavan i fini ručak.

PRIPREMA:

Prvo napravite guacamole tako da vilicom izgnječite oguljeni avokado. Umiješajte unutra nasjeckani luk, češnjak, cherry rajčice, sok od limuna, peršin, sol i papar. Kušajte i prilagodite začine, pa stavite na stranu.

U zdjelici razmutite jaje sa žličicom hladne vode, soli i paprom. Stavite maslac da se rastopi na tavi na srednjoj vatri, pa malo promrdajte tavu da se ravnomjerno namasti. Ulijte razmućeno jaje tako da tava bude pokrivena u tankom sloju i po vrhu posipajte sir. Pecite oko dvije minute, dok donja strana omleta ne postane zlatno-smeđa a gornja strana se ne počne zgušnjavati. Preklopite omlet na pola, pritisnite ga špatulom i maknite s vatre.

Složite sendviče tako da omlet prepolovite, stavite na svaku šnitu kruha po jedanu polovicu i pokrijte jaje sa guacamoleom. Poslužite odmah.
