Gnocchi with Smoked Salmon and Creamy Cauliflower Sauce / Njoki sa dimljenim lososom i kremastim umakom od cvjetače

I already posted a version of cauliflower sauce a while back, so you can check it out over here. This time I had a more decadent dish in mind, which would still turn out way lighter than if you were to make it with just dairy. Luckily, you still get to have super rich taste and luscious and creamy texture, so I definitely recommend this if you want to go a bit easier on the calories. Also, I actually personally prefer this version with some veggies sneaked in, to something which would be loaded with heavy cream.

INGREDIENTS:

METHOD:

Wash, peel and chop up all the veggies. Add olive oil, onion and carrot to a pot on medium heat and saute for about 5-10 minutes to slightly caramelize. Add in chopped cauliflower, season with salt, pepper and garlic powder then cover with broth. If needed, add in a splash more of water so that most of the cauliflower is submerged. Bring it all to a simmer and cover tightly with a lid. Cook for about 15 minutes, until all the veggies are softened and cooked through.

Meanwhile, cook the gnocchi in a separate pot according to package instructions. Rinse, drain and set aside.

Once the cauliflower sauce is cooked, pulse it with immersion blender until creamy and smooth. You can also add in more liquid if needed. Stir in butter and shredded cheese, then add in gnocchi and coat to combine. Return to heat and cook for just a minute or two to warm everything up. Remove from heat and stir in parsley and smoked salmon. Serve immediately.

Ovoga sam puta imala na umu neko dekadentnije jelo, koje bi na ovaj način ipak ispalo puno laganije nego da ga se radi samo sa mliječnim proizvodima. Na sreću, i u ovoj verziji također možete uživati u bogatom okusu i odličnoj kremastoj teksturi, tako da vam svakako preporučam ovu opciju ako želite malo smanjiti kalorije. Također, meni je osobno i draža ovakva mrvicu laganija varijanta gdje se ušulja i nešto povrća, za razliku od nečega zalivenog s jako puno vrhnja.

PRIPREMA:

Operite ogulite i nasjeckajte svo povrće. Maslinovo ulje, luk i mrkvu ubacite u lonac na srednjoj vatri i kuhajte 5-10 minuta da se povrće blago karamelizira. Dodajte narezanu cvjetaču, začinite solju, paprom i češnjakom u prahu te zalijte temeljem. Po potrebi dodajte još malo vode tako da cvjetača bude uglavnom potopljena. Pustite da sve zavrije te čvrsto poklopite i krčkajte 15-tak minuta dok svo povrće ne omekša.

U međuvremenu skuhajte njoke u zasebnom loncu prema uputama na pakiranju. Dobro ih isperite, ocijedite i stavite na stranu.

Kada su cvjetača i povrće gotovi, sve skupa propulsirajte sa štapnim mikserom dok umak ne bude kremast. Prema potrebi dodajte još tekućine. Umiješajte u umak maslac i ribani sir, dodajte njoke i sve dobro promiješajte da se sjedini. Vratite sve skupa na vatru samo na koju minutu da se umak i njoki dobro ugriju. Maknite s vatre i za kraj umiješajte peršin i dimljeni losos. Poslužite odmah.

Because, let’s face it, chopping up a bunch of stuff and dumping it in a bowl is the easiest thing in the world.

METHOD:

Divide the cooked rice between two bowls. Cut the cucumber in half, scoop out and discard the seeds, then thinly slice. Peel and thinly slice the carrot. Top the rice in each bowl with sliced cucumber, carrot, salmon chunks, pickled ginger, lemon juice, Sriracha and soy sauce. Thinly slice the green part of scallion and cut nori into little pieces, then add those too to your bowls as well. Serve each bowl with a small dab of wasabi and enjoy immediately.

Kuhanu rižu rasporedite u dvije zdjelice. Krastavac raspolovite, pa postružite i bacite sjemenke, te ga narežite na tanke kriške. Mrkvu ogulite i narežite tanko. Po riži u svakoj zdjelici poslažite komade krastavca, mrkve, lososa i đumbir, pa onda sve pokapajte limunovim sokom, Srirachom i soja sosom. I admit, this meal does take a bit of time and maybe doesn’t quite fit the quick label, which is more or less a standard on this blog. However, it is still dang easy and super delicious. It also appears a bit fancy, so you can easily plant it to people at a dinner party and they’ll probably be super impressed with your cooking skills and will praise you for slaving away for hours just to feed them. Of course, no one is going to slave away for hours, don’t be absurd.

INGREDIENTS:

For the salmon:

400 grams of salmon fillet (5.33 EUR)

Good pinch of salt (0.01 EUR)

METHOD:

Pat dry the salmon and season it with salt and pepper. Add the salmon, skin-side down, to a lightly oiled skillet on medium heat. Cook for about five minutes on each side. Remove from the skillet and set aside.

While the salmon is frying wash, peel and chop up all the veggies. Also, bring a large pot of water to a boil, add in salt and the gnocchi. Once the gnocchi float up, they are done, so remove them from water, rinse and set aside. Reserve the gnocchi water for later.

To the same skillet where you cooked the salmon add the oil and chopped onion. Saute for a few minutes until slightly translucent before adding in minced garlic, carrots and peas. Season the veggies with salt and pepper and allow them to cook for a few minutes. Finally, add in tomato paste and ricotta. Stir well and dilute with about a cup of reserved gnocchi water. Allow the ricotta to fully melt down, before stirring in the cooked gnocchi. Tear up the fried salmon and stir it into the sauce as well. It may all seem super runny, but the sauce will thicken a lot as everything bakes. You can totally opt to serve this dish as it is, but in that case add less of gnocchi water to the sauce. Taste and adjust seasoning.

Preheat the oven to 200°C. Transfer the gnocchi and salmon with the sauce to a baking dish. Top with shredded cheese and breadcrumbs, then bake for about 20 minutes until crispy on top. Serve warm.

Međutim, ono i dalje nije teško za pripremiti, a jako je ukusno. Naravno, nitko neće crnčiti satima, nemojte biti ludi.

PRIPREMA:

Losos posušite kuhinjskim ručnikom i začinite ga solju i paprom. Stavite ga u lagano nauljenu tavu na srednjoj vatri, tako da je kožom okrenut prema dolje. Pecite oko 5 minuta sa svake strane. Maknite losos iz tave i stavite na stranu.

Dok se losos peče, vi operite, ogulite i nasjeckajte svo povrće. Također, stavite veliki lonac vode da zavrije. Posolite vodu i ubacite njoke. Kada njoki isplivaju znači da su gotovi, pa ih ocijedite, isperite i stavite na stranu. Vodu u kojoj su se njoki kuhali sačuvajte za kasnije.

U istu tavu u kojoj ste pekli losos dodajte ulje i sjeckani luk. Dinstajte par minuta da luk postane staklast prije nego dodate sjeckani češnjak, mrkvu i grašak. Povrće začinite solju i paprom i kuhajte ga nekoliko minuta. Dodajte sada i koncentrat rajčice i ricottu. Dobro sve promiješaje, pa umak razrijedite sa oko šalicom vode koju ste sačuvali od njoka. Pustite da se ricotta skroz rastopi prije nego u umak umiješate kuhane njoke. Pečeni losos natrgajte na komadiće, pa i njega dodajte u umak. Umak vam se možda sada čini jako tekuć, ali budite bez brige, sve će se zgusnuti kako se bude peklo. Također, možete svakako jelo poslužiti i već u ovoj fazi bez dodatnog pečenja, samo u tom slučaju dodajte manje vode od njoka. Kušajte i prilagodite začine.

Pećnicu zagrijte na 200°C. Njoke sa umakom i lososom preselite u posudu za pečenje. Poravnajte i posipajte sa ribanim sirom i krušnim mrvicama. Pecite oko 20 minuta, dok se sve ne zahrska. Poslužite toplo.

Grilled Salmon with Broccoli and Pea Quinoa / Losos na žaru sa kvinojom, brokulom i graškom

For the salmon:

300 grams salmon fillets (4.00 EUR)

1 tbsp olive oil (0.04 EUR)

METHOD:

Wash and pat dry the salmon. Set aside. Wash, peel and chop up all the veggies, including the broccoli stem. I decided to steam the broccoli florets on top of the quinoa pot for some bright green deliciousness, but feel free to dump those straight into the pot if you’re too lazy for this extra step. Wash quinoa in a colander under the running water.

Add the oil to a pot, then sauté the onion for a few minutes until slightly translucent. Add in garlic, broccoli stem and carrots. Stir and cook those for a few minutes to slightly caramelize before adding in peas, tomato paste, salt, pepper, garlic powder, red pepper flakes, coriander, paprika, parsley, bay leaf, quinoa and water. Bring to a rolling boil, place a steaming rack with broccoli florets on top and cover tightly with a lid. Reduce heat to low and cook undisturbed for 15 minutes.

While the quinoa is cooking, season salmon with olive oil, salt and pepper. Cook on a grilling pan for about 3-4 minutes on each side. Once the quinoa is cooked, plate everything and serve drizzled with lemon juice and some lemon wedges.

PRIPREMA:

Operite i kuhinjskim ručnikom posušite losos, pa stavite na stranu. Operite, ogulite i nasjeckajte povrće, uključujući i stabljiku brokule. Ja sam cvjetiće brokule skuhala na pari u istom loncu iznad kvinoje, da imamo nešto zeleno i hrskavo, ali vi slobodno sve ubacite zajedno u lonac ako ste lijeni za taj ekstra korak. Kvinoju dobro isperite u cjediljci pod tekućom vodom.

Ulje dodajte u lonac i par minuta dinstajte luk da postane staklast. Ubacite u lonac češnjak, stabljiku brokule i mrkvu. Promiješajte i kuhajte koju minutu da se sve blago karamelizira, pa onda dodajte grašak, koncentrat rajčice, sol, papar, češnjak u prahu, čili, korijander, slatku papriku, peršin, lovor, kvinoju i vodu. Pustite da zavrije, stavite preko toga rešetku za kuhanje na pari sa cvjetićima brokule, te sve skupa čvrsto poklopite. Smanjite vatru na laganu i sve zajedno kuhajte 15 minuta.

Dok se kvinoja kuha, losos začinite maslinovim uljem, solju i paprom. Pržite ga oko 3-4 minute sa svake strane na gril tavi. Kada je kvinoja gotova, sve skupa servirajte pokapano sokom od limuna i sa još kojom kriškom limuna za dekoraciju.

Oh god, these are good. I mean, this isn’t even a recipe. I’m basically telling you how to make sandwiches. But they are so good that I’m just gonna go ahead and talk about it.

INGREDIENTS:

One baguette, cut under angle and lightly toasted (I used pumpkin seed)

Cream cheese spread

Piece of smoked salmon (I used warm smoked from Ikea)

A few radishes, thinly sliced

Greens of one scallion, thinly sliced

Spread cream cheese on toasted and cooled baguette slices. Add radishes, salmon pieces, sprinkle with scallion greens and season with black pepper. Serve immediately. Drizzle of olive oil would also be nice, but alas, we were all out of olive oil at the time.

Namažite sirni namaz na tostirani i ohlađeni baget. Poslažite gore rotkvice, losos, posipajte zelenje od mladog luka i začinite crnim paprom po ukusu. Poslužite odmah. Par kapi maslinovog ulja bi isto bilo super, ali eto, taman nam ga je doma ponestalo.
