Quick Bean Patties (vegan) / Brzi faširanci od graha (veganski)

We had an easy lunch of mashed potatoes and pureed spinach over the weekend, but had no meat around to make the patties to round the meal up. I kinda have to have spinach and mashed potatoes with patties – it’s just the way the world works, so I quickly whipped up these vegan bean patties. I also apologize upfront for the crappy photos, but lighting in our kitchen is terrible and I was super hungry and couldn’t muster patience for better pictures.

INGREDIENTS:

(Yields 4 patties / 0.38 EUR per patty / 1.52 EUR for all)

For the batter:

1 tbsp flax meal (0.07 EUR)

2 tbsp water (–)

1 tbsp sunflower seed oil (0.01 EUR)

½ of an onion (0.05 EUR)

1 can of brown beans (0.67 EUR)

½ tsp salt (0.01 EUR)

½ tsp freshly ground black pepper (0.03 EUR)

½ tsp garlic powder (0.03 EUR)

1 tbsp dried parsley (0.07 EUR)

1 tbsp tomato puree (0.13 EUR)

1 tsp soy sauce (0.07 EUR)

1 tsp toasted sesame oil (0.13 EUR)

1 tsp Sriracha (0.03 EUR)

½ cup breadcrumbs (0.10 EUR)

Additional:

¼ cup breadcrumbs for coating (0.05 EUR)

¼ cup of sunflower seed oil for frying (0.07 EUR)

METHOD:

Start off by making a flax egg. Whisk together flax meal with water, then set aside for about 10 minutes. Meanwhile, finely dice the onion and saute it in a tablespoon of oil until slightly caramelized. Rinse and drain the beans, then mash them up into a paste. I also left a few chunks in there, because texture is everything. Add the flax egg, sauted onion, salt, pepper, garlic powder, parsley, tomato puree, soy sauce, sesame oil and Sriracha to mashed beans and stir well. Then gradually add in breadcrumbs so that the finally batter is pliable and not too sticky. Taste and adjust seasoning, then refrigerate for about 30 minutes. I skipped this step because I wanted to eat right away, but refrigerating will help the patties to better retain their shape.

After half an hour remove the batter from fridge and shape into four patties. Coat each patty with breadcrumbs then fry on a well-oiled pan on medium heat for about 5 minutes on each side. Be sure to flip the patties gently, as they are more delicate then classic meat patties. Serve warm.

Za vikend smo radili jednostavan ručak sa pire krumpirom i pireom od špinata, ali nismo imali doma nikakvog mesa za faširance. Za mene to nikako nije moglo proći jer ja jednostavno moram imati faširanac uz špinat, tako da sam na brzinu smutila ove od graha. Također, unaprijed se ispričavam zbog jadnih fotki, ali osvjetljenje nam je koma u kuhinji, a ja sam jednostavno bila previše gladna i prenestrpljiva da se više potrudim. 😀

PRIPREMA:

Za početak pripremite lan-jaje (flax egg). Pomiješajte mljeveni lan sa vodom i pustite da odstoji desetak minuta da se zgusne. U međuvremenu sitno nasjeckajte luk pa ga ispržite na žlici ulja da se blago karamelizira. Isperite i dobro ocijedite grah te ga izgnječite u pire. Ja sam također ostavila i nešto komadića jer je tekstura super u svemu. U zgnječeni grah dodajte lan-jaje, karamelizirani luk, sol, papar, češnjak, peršin, koncentrat rajčice, soja sos, sezamovo ulje i Srirachu, te sve dobro promiješajte da se sjedini. Postepeno dodajte krušne mrvice, sve dok se smjesa ne zgusne i prestane biti jako ljepljiva. Kušajte i prilagodite začine, pa smjesu stavite u hladnjak na pola sata. Ja sam ovaj korak preskočila jer sam bila nestrpljiva i gladna, ali ako ohladite smjesu faširanci će se bolje držati skupa.

Nakon pola sata smjesu izvadite iz hladnjaka te oblikujte u četiri faširanca. Uvaljajte faširance u krušne mrvice, pa ih ispržite u dobro nauljenoj tavi, po oko pet minuta sa svake strane. Samo pazite kada faširance okrećete da budete nježni, jer su puno delikatniji od klasičnih mesnih faširanaca. Poslužite toplo.

I haven’t posted a vegan burger recipe in a while, so here are some easy and delicious black bean and chickpea barbecue patties for you to enjoy.

INGREDIENTS:

3 tbsp sunflower seed oil, divided (0.04 EUR)

1 large onion (0.10 EUR)

1 red bell pepper (0.40 EUR)

2 cups precooked black beans (0.40 EUR)

METHOD:

Wash, peel and dice all the veggies. Add one tablespoon of oil, diced onion, minced garlic and bell pepper to a skillet on medium-high heat and saute for about 5 minutes, until slightly caramelized and softened. Set aside.

Add the black beans to a bowl and using a potato masher, mash them up until a chunky paste forms. Add in the sauted onion and pepper mix, remaining oil, garlic powder, chili, black pepper, salt and barbecue sauce. Give a good stir, then add in chickpea flour a bit by bit, until the mixture is thick enough to shape into patties.

Line a baking tray with parchment paper and preheat the oven to 200°C. Scoop the prepared burger mixture, shape into patties and spread on a prepared baking tray. Bake for 25-30 minutes, until the burgers are crispy and done to your liking.

PRIPREMA:

Operite, ogulite i nasjeckajte svo povrće. U tavicu na srednje jakoj vatri dodajte žlicu ulja, sjeckani luk, češnjak i papriku, pa dinstajte oko pet minuta da se sve blago karamelizira i omekša. Stavite na stranu.

Grah stavite u veću zdjelu pa izgnječite sa gnječilicom za pire dok ne dobijete pastu sa komadićima graha. U to ubacite dinstani miks luka i paprike, preostalo ulje, češnjak u prahu, čili, papar, sol i barbecue umak. Dobro sve promiješajte, pa malo po malo dodajte brašno od slanutka dok smjesa ne bude dovoljno gusta da možete formirati burgere.

Protvan obložite papirom za pečenje i zagrijte pećnicu na 200°C. Smjesu formirajte u burgere koje ćete raširiti po pripremljenom protvanu. Pecite oko 25-30 minuta, dok burgeri ne budu pečeni i hrskavi prema vašem ukusu.

These burgers are one of those things where you throw everything together in a food processor, which is basically one of my favorite type of recipes. If there is any way that I can reduce the amount of actual work I need to do myself in the kitchen, I’m all for it. I’m quite certain that laziness is in equal part a mother of invention, as is a necessity.

INGREDIENTS:

7-8 big Portobello mushrooms (1.33 EUR)

1 small onion (0.07 EUR)

METHOD:

Wash and pat dry the mushrooms and peel the onion and garlic. Roughly chop everything up, then throw in a food processor to grind down a bit, together with fresh parsley. Don’t pulse for too long, because you’ll end up with a mush, which is not what we’re going for. Add in all of the remaining ingredients and pulse briefly again, just to combine. Refrigerate for 30 minutes so the mixture is easier to handle.

Using your hands divide and shape the mixture into patties, then spread them out onto parchment lined baking sheet. At this point you can either freeze the patties for later use, pan fry them, or roast them in the oven at 200°C for 25-30 minutes. Just keep in mind that due to the water content in the mushrooms, these will shrink more than regular burgers, but are still very juicy and delicious.

PRIPREMA:

Operite i kuhinjskim ručnikom posušite gljive te ogulite luk i češnjak. Grubo sve to nasjeckajte skupa sa peršinom i ubacite u multipraktik, pa pulsirajte da se sve usitni. Nemojte predugo pulsirati jer ćete dobiti gnjecavu kašu, a to nije ono što tu želimo. Dodajte sve preostale sastojke u multipraktik i još malo kratko propulsirajte samo da se svi sastojci sjedine. Smjesu stavite u hladnjak na 30-tak minuta kako bi se malo stisnula pa da vam s njom bude lakše rukovati.

Rukama smjesu raspodijelite i oblikujte u pljeskavice, pa njih raširite po protvanu koji ste obložili papirom za pečenje. Sada možete burgere smrznuti za kasniju upotrebu, ispržiti ih u tavi ili ih 25-30 minuta peći u pećnici zagrijanoj na 200°C. Samo imajte na umu to da će se burgeri dosta stisnuti radi veće količine vode u gljivama, ali će ispasti jako sočni i ukusni.

Alright, we’ve come to the last installment of my vegan minced ‘’meat’’ trilogy and I’ve saved my favorite recipe for the very end. This Sloppy Joe is pretty much everything you would want to have in a burger. I really hope you give this one a try because I am salivating just thinking about how good this was.

3-4 tbsp vegan minced “meat” (0.33 EUR)

1 burger bun (0.20 EUR)

METHOD:

Place a non-stick skillet on medium heat with a teaspoon of oil and fry the vegan mince until dark brown and slightly crispy, for about five minutes. Remove the mince from the skillet and set aside. Cut the burger bun in half and place on the skillet to slightly crisp up, cut side down.

Once the bun is done, spread the bottom half with mustard, add a slice of cheese and top it with fried mince. Top the minced ‘’meat’’ with another slice of cheese and return everything to your skillet so the cheese can melt. Cover the skillet with a lid and cook for just a minute or two, until the cheese is nice and melty. Once the cheese is done, top it with tomato and onion. Spread mayo and ketchup on the top half of the bun, cover your burger and dig in immediately.

PRIPREMA:

Stavite tavicu na srednju vatru, pa na žličici ulja oko pet minuta pecite vegansko ”meso”, sve dok ne potamni i lagano se ne zahrska. Maknite ”meso” iz tave i stavite na stranu. Pecivo prerežite na pola i stavite na tavicu sa prerezanom stranom prema dolje da se blago zapeče.

Kada je pecivo gotovo, donju polovicu namažite senfom, stavite šnitu sira i po siru rasporedite ”meso”. Poklopite sa još jednom šnitom sira i tako sve zajedno vratite na tavicu da se sir rastopi. Poklopite tavicu i kuhajte samo minutu-dvije dok se sir ne počne topiti. Maknite s vatre i po siru poslažite šnite rajčice i luka. Gornju polovicu peciva premažite sa majonezom i kečapom, poklopite burger i odmah navalite.

METHOD:

Place the burger bun in a small bowl and cover with milk. Allow to soak while you prepare everything else. Peel and finely dice the onion and mince the garlic. Peel the carrot and grate it on a box grater. Add 3 tablespoons of oil to a small pan on a high heat and saute the onion for about five minutes until translucent. Now add in fresh garlic, garlic powder, paprika, oregano, coriander, chili, black pepper and salt and stir for a minute so the spices get fragrant. Dump in shredded carrot and cook for a few minutes until softened.

Pulse the beans with ketchup in a food processor until creamy. Transfer the beans to a bowl, together with carrot and onion mix, parsley and flax seeds. Using your hands, rip the soaked and softened burger bun to small pieces into this mix and give everything a very good stir. Gradually add in the breadcrumbs as needed, so the mix thickens up and is not too sticky. Taste and adjust seasonings, then refrigerate the batter for half an hour so all the flavors have time to combine and the mixture is easier to handle.

After 30 minutes shape the batter into burger patties and coat each patty with breadcrumbs on all sides. Fry the patties in a bit of oil on stovetop for a few minutes on each side, or lightly brush with oil, spread on a parchment lined baking sheet and bake for 20 minutes at 200°C to crisp them up. Serve warm, adorned with burger paraphernalia of your choice.

PRIPREMA:

Žemlju stavite u malu zdjelicu i zalijte s mlijekom, pa ju ostavite da se namače dok pripremite sve ostalo. Ogulite i fino nasjeckajte luk i češnjak, te ogulite i naribajte mrkve. U malu tavicu dodajte 3 žlice ulja pa na jakoj vatri kratko prodinstajte luk dok ne bude staklast. Na luk dodajte svježi i sušeni češnjak, papriku, origano, korijander, čili, papar i sol, te promiješajte i kuhajte minutu, samo da začini zamiriše. Ubacite na to ribanu mrkvu, te kratko dinstajte da omekša.

Grah skupa sa kečapom propulsirajte u multipraktiku da bude kremast. Preselite grah u zdjelu skupa sa dinstanom mrkvom, peršinom i mljevenim lanom. Rukama u to nadrobite namočenu žemlju, pa sve jako dobro promiješajte. Postepeno dodajte krušnih mrvica, koliko bude trebalo da se smjesa zgusne i ne bude jako ljepljiva. Takvu gotovu smjesu stavite u hladnjak na pola sata kako bi se arome sjedinile i kako bi smjesom bilo lakše rukovati.

Nakon 30 minuta od smjese formirajte burgere, pa svaki burger obložite krušnim mrvicama. Burgere kratko popecite sa obje strane na malo ulja u tavi, ili ih jednostavno premažite sa malo ulja te ubacite u pećnicu zagrijanu na 200°C na 20 minuta da se malo zahrskaju. Poslužite toplo, sa vama najdražim dodatcima.

The other day while browsing the store I stumbled onto super affordable frozen minced chicken. Instantly, I knew that I was going to make burgers. These came together fairly quickly and turned out super yum. I decided to bake the burgers in the oven instead of pan frying, so they required less oil and fussing.

(Yields 12 burgers / 0.34 EUR per burger / 4.09 EUR for all)

For the burger mix:

2 cups minced chicken (2.27 EUR)

1 cup breadcrumbs (0.20 EUR)

METHOD:

Make the burger mix by stirring together all of the ingredients until well combined. I find the best way to do this is just to use my hands and that way I can ensure it all mingles well together. Allow the mixture to sit for 30 minutes so the flavors have time to develop.

When ready to bake, preheat the oven to 200°C and line a baking sheet with parchment paper. Scoop about a ¼ cup of the mixture and form into a patty. Coat with breadcrumbs and arrange on a prepared baking sheet. Repeat until all of the mixture is used up. When all of the patties are assembled, lightly brush them with oil on both sides. Bake for 35 minutes, until crispy and golden brown. These reheat excellent but are also fantastic cold, straight out of the fridge.

Neki sam dan prilikom pohoda u dućan naletjela na jeftinu smrznutu mljevenu piletinu. Odmah sam znala da ću raditi burgere. Ovo sam jelo za čas zgotovila, a burgeri su ispali mrak. Odlučila sam ih peći u pećnici, a ne na tavi, tako da je za sve trebalo manje ulja i petljanja.

PRIPREMA:

Spremite smjesu za burgere tako da sve sastojke dobro izmješate dok se ne sjedine. Meni je najlakše to jednostavno napraviti rukama jer sam tako sigurna da se sve dobro prominglalo. Ostavite smjesu da miruje 30 minuta kako bi se okusi razvili.

Kada ste spremni za pečenje, zagrijte pećnicu na 200°C i protvan obložite papirom za pečenje. Odgrabite oko ¼ šalice smjese i formirajte u burger. Obložite krušnim mrvicama sa svih strana i stavite na pripremljeni protvan. Ponavljajte dok ne potrošite svu smjesu. Kada ste pripremili sve burgere, lagano ih sa obje strane premažite uljem. Pecite oko 35 minuta, dok burgeri ne budu hrskavi i zlatno-smeđi. Oni se super podgrijavaju, ali su jako ukusni i hladni, direktno iz frižidera.

Low on cash, but want to make something filling and delicious? Fear not, these burgers are just the thing.

I came up with this recipe in order to use up all of the bits and bobs I had lying around the house. For different bits and bobs you have on your hand, feel free to subtract or add things. Just remember, you’ll need to add plenty of dry ingredients to the mashed beans and chopped vegetables to hold those burgers together. Here I opted for soy flakes, so I could ditch breadcrumbs or flour and make the burgers even more protein packed.

INGREDIENTS:

(Yields 8 burger patties / 0.27 EUR per patty / 2.14 EUR for all)

1 ½ cup precooked cannellini beans (0.40 EUR)

1 small onion, finely diced (0.07 EUR)

3 garlic cloves, minced (0.10 EUR)

½ small bell pepper, finely diced (0.13 EUR)

1 cup dried soy flakes (0.53 EUR)

1 large egg (0.20 EUR)

2 tbsp finely grated hard cheese, like Parmigiano Reggiano, Grana Padano, etc. (0.13 EUR)

Bunch of fresh parsley, finely chopped (0.07 EUR)

2 tbsp ground flax seed (0.07 EUR)

2 tbsp olive oil (0.09 EUR)

2 tbsp Thai sweet chili sauce (0.27 EUR)

1 tsp sweet Hungarian paprika (0.03 EUR)

½ tsp smoked paprika (0.03 EUR)

½ tsp salt (0.01 EUR)

½ tsp freshly cracked black pepper (0.01 EUR)

METHOD:

Strain the beans from any liquid and pat dry with a kitchen towel, then mash them up using a potato masher. Add all of the ingredients to the bean paste and stir really well to combine. Let sit for about half an hour, so all the flavors can mix.

When ready to bake, preheat oven to 200°C. Line baking sheet with parchment paper and using a large spoon (or large ice cream scoop, if you have one), divide the mixture on baking sheet. Gently press the down with your hands and thus form into patties. Bake for 25-30 minutes, until crispy and deep golden-brown.

Samo imajte na umu da trebate u burgere dodati dovoljno suhih sastojaka u pastu od graha i nasjeckano povrće kako bi se sve držalo na okupu. 1 mali luk, sitno nasjeckan (0,50 kn)

3 češnja češnjaka, sitno nasjeckana (0,75 kn)

½ male paprike babure, sitno nasjeckane (1,00 kn)

1 šalica sojinih ljuspica (4,00 kn)

1 jaje (1,50 kn)

2 žlice fino naribanog tvrdog sira, kao parmezan, Grana Padano i sl. (1,00 kn)

Pregršt svježeg peršina, sitno nasjeckanog (0,50 kn)

2 žlice mljevenih sjemenki lana (0,50 kn)

2 žlice maslinovog ulja (0,66 kn)

2 žlice tajlandskog slatkog chili umaka (2,00 kn)

1 žličica slatke crvene paprike (0,25 kn)

½ žličice dimljene crvene paprike (0,25 kn)

½ žličice soli (0,01 kn)

½ žličice svježe mljevenog crnog papra (0,05 kn)

PRIPREMA:

Ocijedite grah od tekućine i malo ga posušite kuhinjskim ručnikom, pa ga onda izgnječite sa gnječilicom za krumpir. Dodajte sve sastojke u pastu od graha i dobro sve promiješajte. Pustite smjesu da odstoji oko pola sata kako bi se svi okusi proželi.

Kada ste spremni za pečenje, zagrijte pećnicu na 200°C. Obložite protvan za pečenje masnim papirom, pa velikom žlicom (ili velikom žlicom za sladoled, ako ju imate) grabite smjesu na protvan. Rukama nježno pritisnite smjesu da biste formirali burgere. Pecite oko 25-30 minuta, dok burgeri ne budu hrskavi i ne dobiju lijepu zlatno-smeđu boju.
