Honestly, I feel like you could coat a bag of styrofoam in the spicy peanut sauce I’ve combined for this recipe, and it would taste freaking amazing. So even if you are not a great fan of broccoli and vegetables in general, this might be just the right way to make things more palatable. If you already like your greens, just make this dish because it’s sooo good!

INGREDIENTS:

For the stir-fry:

2 tbsp sunflower seed oil (0.03 EUR)

3 red bell peppers (0.80 EUR)

METHOD:

Wash, peel and chop up all of the veggies. Place a wok or a deep pan on high heat and allow to thoroughly warm up. Add in the oil and peppers, then cook for a few minutes until softened and slightly charred. Throw in sliced onion, garlic, chili and peanuts and briefly cook those up before adding in broccoli.

While the broccoli is cooking, place all sauce ingredients into a small bowl and whisk to dissolve peanut butter. Once the broccoli is done to your liking (I prefer it a bit on the crispy side), pour the sauce over everything and stir to warm up and coat all of the ingredients. And you are done! Serve immediately over a bed of rice.

PRIPREMA:

Operite, ogulite i nasjeckajte svo povrće. Duboku tavu ili wok stavite na jaku vatru i pustite da se dobro ugriju. Dodajte ulje i papriku, pa kuhajte par minuta da paprika omekša i lagano se karamelizira. Ubacite nasjeckani luk, češnjak, čili i kikiriki, te kratko kuhajte prije nego ubacite brokulu.

Dok se brokula kuha, sve sastojke za umak stavite u zdjelicu i miješajte dok se kikiriki maslac skroz ne rastopi. Kada je brokula kuhana po vašem ukusu (ja ju volim da ostane još malo hrskava), sve zalijte umakom i dobro promiješajte da se umak ugrije i obloži sve sastojke. I gotovi ste! Poslužite odmah preko kuhane riže.

Since I really enjoyed my first experiment with these healthy and easy snacks, I decided to whip up some more bliss balls. IMO, these taste just like Snickers, which is pretty much a win in my book.

Also, you can easily make the oat flour yourselves. Just throw some rolled oats into a food processor and pulse to grind them down in a fine powder.

INGREDIENTS:

METHOD:

Soak the dates in warm water to soften them up, about 10-15 minutes before starting. Drain the dates and add them to a food processor together with peanut butter, oat flour, cacao powder and salt. Pulse until thick dough forms and if needed add a tiny bit of water to hold it all together.

Refrigerate the dough for 30 minutes before forming into bliss balls, to ensure easier handling. Dampen your fingers slightly with water before shaping the dough into balls. Store refrigerated in an airtight container for up to five days.

Namočite datulje u toploj vodi 10-15 minuta prije početka da malo omekšaju. Ocijedite datulje, pa ih skupa sa kikiriki maslacem, zobenim brašnom, kakaom i soli ubacite u multipraktik. Pulsirajte dok se ne formira gusto tijesto, a po potrebi dodajte mrvicu vode da se sve lakše drži na okupu.

Tijesto stavite u hladnjak na 30 minuta kako bi vam bilo lakše formirati kuglice. Ruke malo namočite, pa prstima oblikujte kuglice od tijesta. Čuvajte u hermetički zatvorenoj posudi u hladnjaku do pet dana.

This is basically the same sauce from this cauliflower recipe. It was so good that I just had to have more of it. The stir-fry is greatly improvised from what we had around the fridge. I think some spring onion would be awesome here, but unfortunately we didn’t have any. Just the same, the recipe turned out delicious.

METHOD:

First prepare the peanut sauce by whisking all of the ingredients on low heat until peanut butter and corn starch are completely dissolved and then bring to a gentle simmer. Cook for a few minutes, while stirring constantly so the sauce thickens a bit. Keep the sauce warm while you prepare the rest.

Wash, peel and chop all the vegetables and mushrooms, while keeping the ingredients separated. Place a deep pan or a wok on high heat for a few minutes until thoroughly heated through. Add in sunflower seed oil, minced chicken, soy sauce, salt and black pepper. Stir well to incorporate and break the chicken in small chunks with a spatula. Stir-fry for a few minutes, until chicken is thoroughly cooked through. Then gradually add in chopped mushrooms, carrots, red peppers and onion in this exact order, taking the time to cook every ingredient for a few minutes before throwing in the new one. When all is done, pour in the peanut sauce on top and give a good stir. Serve immediately over a bed of cooked rice.

PRIPREMA:

Prvo priredite umak od kikirikija tako da na slaboj vatri miješate sve sastojke, sve dok se maslac od kikirikija i kukuruzni škrob do kraja ne rastope. Pustite da sve lagano zavrije, te kuhajte nekoliko minuta uz stalno miješanje, tako da se umak zgusne. Držite umak na toplom dok pripremite sve ostalo.

Operite, ogulite i nasjeckajte svo povrće i gljive, no sve sastojke držite razdvojene. Stavite duboku tavu ili wok na jaku vatru i pustite par minuta da se dobro ugrije. Ubacite u wok suncokretovo ulje, meso, soja sos, sol i papar. Dobro promiješajte te piletinu usitnite špatulom. Kuhajte nekoliko minuta, dok meso ne bude skroz gotovo. Sada jedno po jedno ovim redoslijedom dodajte nasjeckane gljive, mrkve, paprike i luk, s time da pustite par minuta prije nego ubacite idući sastojak kako bi se sve dobro skuhalo. Kada je sve gotovo, zalijte umakom od kikirikija i dobro promiješajte. Poslužite odmah preko kuhane riže.

Amazing Six Ingredient Peanut Sauce / Fantastični umak od kikirikija iz šest sastojaka

This sauce is as easy as it gets. And delicious! One of the ingredients is water. The other five are not smoked salt harvested from Saturn’s inner rings or dried algae indigenous to the Red Sea. Yeah, bummer, I know.

I used raw peanuts because that’s what I’ve had around. Also, I didn’t mind sitting down for an hour long shelling session. I’d definitely recommend that you avoid salted and oil roasted shelled peanuts, though and seek some healthier alternatives.

INGREDIENTS:

(Yields about 2 cups of sauce / 1.07 EUR per cup / 2.15 EUR for all)

1 ½ cups shelled raw peanuts, divided (2.00 EUR)

1-2 cups water, divided (–)

1 tbsp sunflower seed oil (0.01 EUR)

1 large onion, diced (0.10 EUR)

Pinch of salt (0.01 EUR)

Pinch of crushed red hot pepper flakes (0.03 EUR)

METHOD:

Add 1 cup of prepared whole peanuts to food processor with about a cup of water and pulse on high to desired consistency and smoothness. The remaining ½ cup of peanuts reserve whole for later.

In a deep pot, saute diced onion on a tablespoon of oil on medium heat until translucent. Add remaining whole peanuts and saute until they become golden-brown, adding a bit of water as necessary. For raw peanuts this might take up to 20-30 minutes. Now add prepared peanut paste, salt and pepper flakes, stir and dilute a bit with water if necessary. Let the sauce simmer for about 10 minutes. The sauce will thicken as it cooks, and also later as it cools down, but you can dilute it with more water at any time.

Serve the sauce as a dip, salad dressing, over roasted vegetables, roasted meat, pasta, rice or noodles. I’ve eaten it over a bowl of basic cooked rice.

Ovaj je umak jednostavan da ne može biti jednostavniji. I ukusan. Jedan od potrebnih sastojaka je voda. Ostalih pet nisu dimljena sol sa Saturnovih unutarnjih prstenova ili sušene endemske alge iz Crvenog mora. Znam, znam, šteta.

Ja sam upotrijebila sirove kikirikije jer smo to imali kod kuće i nije mi bio problem odvojiti sat vremena za seansu ljuštenja. Ipak, u svakom slučaju bi preporučila da izbjegavate slane oljuštene kikirikije pržene u ulju i potražite neku zdraviju alternativu.

SASTOJCI:

Dodajte šalicu pripremljenih kikirikija u blender sa oko šalicom vode i meljite na najvećoj brzini do željene konzistencije i gustoće. Preostalih ½ šalice kikirikija sačuvajte cijele za kasnije.

U dubokom loncu i na srednjoj vatri izdinstajte luk na žlici ulja dok ne bude staklast. Dodajte ½ šalice cijelih kikirikija i dinstajte da postanu zlatno-žuti, dodajući malo po malo vode po potrebi. Za sirove kikirikije to može potrajati i do 20-30 minuta. Onda ubacite pripremljenu pastu od kikirikija, sol i čili, promiješajte i razrijedite po potrebi sa malo vode. Pustite da se umak krčka na slaboj vatri oko 10 minuta. Umak će se zgusnuti kako se kuha, te također kasnije kada se bude hladio, ali ga u bilo kojem trenutku možete razrijediti sa još vode.

Poslužite umak za umakanje grickalica, kao dresing za salatu, preko pečenog povrća, pečenog mesa, tjestenine, riže ili nudlsa. Ja sam pojela porciju preko zdjelice obične kuhane riže.
