Greek Yogurt Plum Cake / Kolač sa grčkim jogurtom i šljivama

Am I too late to the party with this plum cake? I sincerely hope not. You see, I’ve made this recipe a while ago and simply forgot to post about it. Actually, and more accurately, I did not forget, but life simply kept getting in my way. Hopefully you can still get your hands on some plums and make this delicious and easy dessert.

INGREDIENTS:

(Yields 1 cake / 3.10 EUR)

For the batter:

2 eggs (0.40 EUR)

½ cup brown sugar (0.20 EUR)

3 tbsp butter, softened at room temperature (0.40 EUR)

1 tsp pure vanilla extract (0.03 EUR)

Good pinch of salt (0.01 EUR)

¼ cup neutral oil (0.10 EUR)

2 cups Greek yogurt (0.80 EUR)

1 cup all-purpose flour (0.07 EUR)

1 cup whole wheat flour (0.10 EUR)

1 tsp baking powder (0.01 EUR)

½ tsp baking soda (0.01 EUR)

Additional:

500 grams of ripe plums (0.80 EUR)

3 tbsp brown sugar (0.10 EUR)

Butter for greasing the pan (0.07 EUR)

METHOD:

Preheat the oven to 200°C. Grease a baking pan with butter and line it with parchment paper. In a bowl, whisk together eggs, sugar, butter, vanilla and salt until creamy and combined. Add in the oil and Greek yogurt, then stir well to incorporate. Finally, add in both flours, baking powder and baking soda, and stir until just combined. Transfer the batter to a prepared pan and even it out with a spatula.

Halve and pit the plums, then arrange on top of the cake. Sprinkle the cake with brown sugar, then bake for 40-45 minutes, until the cake is puffy and crispy on top and the plums are blistered and lightly caramelized. Allow the cake to cool completely in its pan before slicing and serving.

Jesam li možda previše zakasnila sa ovim kolačem od šljiva? Iskreno se nadam da ne. Jer ovaj sam kolač zapravo ispekla pred masu vremena i onda jednostavno zaboravila objaviti išta o njemu. Ok, da malo preciziram, nisam čak niti zaboravila, nego mi se jednostavno život prepriječio na putu sa nekim svojim glupostima. Uz malo sreće, još uvijek ćete moći nabaviti šljive, pa onda svakako isprobajte i ovaj ukusni i jednostavni desert.

SASTOJCI:

(Za 1 kolač / 23,07 kn)

Za smjesu:

2 jaja (3,00 kn)

½ šalice smeđeg šećera (1,50 kn)

3 žlice maslaca, omekšanog na sobnoj temperaturi (3,00 kn)

1 žličica ekstrakta od vanilije (0,20 kn)

Dobar prstohvat soli (0,01 kn)

¼ šalice nekog neutralnog ulja (0,75 kn)

2 šalice grčkog jogurta (6,00 kn)

1 šalica glatkog brašna (0,50 kn)

1 šalica integralnog brašna (0,75 kn)

1 žličica praška za pecivo (0,10 kn)

½ žličice sode bikarbone (0,01 kn)

Dodatno:

500 g zrelih šljiva (6,00 kn)

3 žlice smeđeg šećera (0,75 kn)

Maslac za namastiti protvan (0,50 kn)

PRIPREMA:

Zagrijte pećnicu na 200°C. Maslacem lagano namastite protvan i obložite ga papirom za pečenje. U zdjeli razmutite jaja sa šećerom, maslacem, vanilijom i solju dok sve ne bude kremasto. Dodajte ulje i grčki jogurt, pa dobro promiješajte da se sjedini. Za kraj, dodajte u smjesu oba brašna, prašak za pecivo i sodu bikarbonu i miješajte tek toliko koliko treba da sve bude jednolično. Tijesto preselite u pripremljeni protvan i poravnajte špatulom.

Šljive prepolovite i posložite po kolaču. Sve posipajte sa smeđim šećerom te stavite peći na 40-45 minuta, dok kolač ne nabubri i bude hrskav, a šljive se blago karameliziraju. Pustite da se kolač skroz ohladi u svojem protvanu prije nego ga narežete i poslužite.
