Pineapple cake / Kolač od ananasa

We had this sad lonely pineapple lying around for a while so naturally I decided to bake it into a cake. Let me tell you, no fruit is safe from being tossed into the oven in our household. This cake is a breeze to whip up, so if you have a case of neglected pineapple as well, you know what to do.

INGREDIENTS:

(Yields 1 cake / 4.19 EUR)

For the batter:

1 pineapple (2.00 EUR)

2 eggs (0.40 EUR)

1 tsp pure vanilla extract (0.03 EUR)

4 tbsp butter, melted (0.53 EUR)

2 cups all-purpose flour (0.13 EUR)

¾ cup brown sugar, divided (1.00 EUR)

1 tsp baking powder (0.01 EUR)

½ tsp baking soda (0.01 EUR)

Pinch of salt (0.01 EUR)

Additional:

Butter for greasing the pan (0.07 EUR)

METHOD:

Preheat the oven to 180°C. Grease a baking pan with butter and set aside. Clean and cube the pineapple, toss 2/3 of it in a food processor and pulse until creamy, but reserve the remaining 1/3 for later. Add the eggs and vanilla to pineapple pulp and blitz to combine. Finally, add in the melted butter and give a final pulse.

In a bowl, whisk together flour, ½ cup of sugar, baking powder, baking soda and salt. Pour the liquid pineapple mixture over flour and stir to combine. Pour the batter into prepared pan and shake to even out. Add reserved pineapple and remaining ¼ cup of sugar to food processor and blitz for just a few seconds, so you end up with a chunky mixture. Distribute the mixture on top of the cake batter and bake it for 1 hour, until golden brown and a skewer inserted in the cake comes out clean.

Serve the cake warm or at room temperature.

Imali smo doma jedan usamljeni tužni ananas pa sam ga, naravno, odlučila ubaciti u kolač. Da vam odma priznam, niti jedno voće nije sigurno kod nas doma od toga da završi u pećnici. Ako i vi imate sindrom odbačenog ananasa, znate što vam je činiti.

PRIPREMA:

(Za 1 kolač / 31,32 kn)

Za kolač:

1 ananas (15,00 kn)

2 jaja (3,00 kn)

1 žličica ekstrakta od vanilije (0,20 kn)

4 žlice maslaca, rastopljenog (4,00 kn)

2 šalice glatkog brašna (1,00 kn)

¾ šalice smeđeg šećera, podijeljene (7,50 kn)

1 žličica praška za pecivo (0,10 kn)

½ žličice sode bikarbone (0,01 kn)

Prstohvat soli (0,01 kn)

Dodatno:

Maslac za namastiti kalup (0,50 kn)

PRIPREMA:

Zagrijte pećnicu na 180°C. Namastite kalup i obložite papirom za pečenje, pa stavite na stranu. Očistite i narežite ananas na kockice. Ubacite 2/3 ananasa u multipraktik i pulsirajte dok ne bude kremast, s time da 1/3 ananasa ostavite u kockicama za kasnije. Dodajte jaja i vaniliju u pulpu od ananasa i propulsirajte, te za kraj dodajte i rastopljeni maslac i još jednom propulsirajte da se sve sjedini.

U zdjeli pomiješajte brašno, ½ šalice šećera, prašak za pecivo, sodu bikarbonu i sol. Preko toga prelijte tekuću smjesu sa ananasom i dobro promiješajte da se sjedini. Iskrenite smjesu u pripremljeni protvan i prodrmajte da se poravna. Ostatak ananasa koji ste sačuvali dodajte sa preostalom ¼ šalice šećera u multipraktik i samo kratko problicajte da dobijete smjesu sa komadićima ananasa. To rasporedite po tijestu u protvanu i pecite 1 sat, dok kolač ne bude zlatno smeđi, a čačkalica bude čista kad upiknete kolač.

Poslužite kolač topli ili na sobnoj temperaturi.
