Tzatziki Sauce (vegetarian) / Tzatziki umak (vegetarijanski)

This sauce, which can also double as a salad, is an excellent companion to a whole wide array of savory dishes. You can dip pretty much anything into it, use it as a sandwich spread or eat it up with a spoon straight out of the bowl. Fresh cucumbers make it super refreshing and hence it’s definitely one of my favorite summer treats. And yeah, we’ve been gorging on this for months and only now I remembered to write up a recipe. However, there’s still time, so go ahead and make this sauce while the cucumber season is still going strong.

INGREDIENTS:

(Yields 2 servings / 0.36 EUR per serving / 0.72 EUR for all)

1 large cucumber (0.20 EUR)

2 garlic cloves (0.07 EUR)

Good pinch of salt (0.01 EUR)

½ tsp freshly ground black pepper (0.03 EUR)

1 tbsp apple cyder vinegar (0.01 EUR)

1 cup Greek yogurt (0.40 EUR)

METHOD:

Wash the cucumber then cut it in half lengthwise. Using a spoon, scoop out and discard all of the seeds. Grate both cucumber halves on a box grater. Add minced garlic, salt, black pepper, vinegar and Greek yogurt to your cucumber, then stir well to fully combine. You can also spike it all up with fresh herbs like dill or chives, but we prefer it plain like this. Chill until ready to serve. This sauce can also keep refrigerated in an airtight container for a day or two.

Ovaj umak, koji može proći i pod salatu, je odličan dodatak cijelom nizu slanih jela. Nema što u njega ne možete umakati, super je i kao namaz za sendviče, a može se sasvim lijepo jesti i sa žlicom direktno iz zdjele. Krastavci cijelu priču čine jako osvježavajućom, pa je meni to jedna od dražih ljetnih poslastica. I da, davimo se u ovom sosu već mjesecima, ali eto, tek sam se sad sjetila natipkati recept. Ali još uvijek nije kasno, tako da obavezno smućkajte ovaj umak dok još traje sezona krastavaca.

SASTOJCI:

(Za 2 porcije / 2,68 kn po porciji / 5,36 kn za sve)

1 veliki krastavac (1,50 kn)

2 češnja češnjaka (0,50 kn)

Dobar prstohvat soli (0,01 kn)

½ žličice svježe mljevenog crnog papra (0,25 kn)

1 žlica jabučnog octa (0,10 kn)

1 šalica grčkog jogurta (3,00 kn)

PRIPREMA:

Krastavac dobro operite i prerežite ga na pola po dužini. Žlicom izdubite i bacite sve sjemenke, pa obje polovice krastavca naribajte. Dodajte fino sjeckani češnjak, sol, papar, ocat i grčki jogurt, pa sve dobro promiješajte da se sjedini. Sve možete još podebljati sa svježim začinima tipa kopar ili vlasac, ali nama je tzatziki najdraži ovakav. Umak dobro ohladite prije posluživanja, a u hladnjaku će u hermetički zatvorenoj posudi držati dan ili dva.
