Caramel Millet Pudding (vegan) / Karamel pudding od prosa (veganski)

Have you tried millet pudding so far? No? You definitely need to change that! My expectations about this dish were pretty moderate, but it easily won me over. Needless to say, like the majority of things on this blog, this is also super easy to prepare.

INGREDIENTS:

(Yields 4 servings / 0.81 EUR per serving / 3.23 EUR for all)

For the pudding:

1 cup millet (0.40 EUR)

2 tbsp coconut oil (0.13 EUR)

2 cups water (–)

3 cups non-dairy milk, divided (1.20 EUR)

4 tbsp date syrup (0.13 EUR)

½ tsp salt (0.01 EUR)

1 tsp pure vanilla extract (0.03 EUR)

Toppings:

4 tbsp date syrup (0.13 EUR)

½ cup chopped dates (0.40 EUR)

4 tbsp sliced almonds (0.80 EUR)

METHOD:

Rinse the millet in a colander under running water. Transfer to a clean pot, then lightly toast on medium heat for about five minutes, until slightly darker in color and fragrant. Be sure to stir frequently as you don’t want the millet to burn. Add coconut oil, water, two cups of milk, date syrup and salt to the pot with millet and bring to a gentle simmer. Cook covered for about 25 minutes until the millet is super soft, while stirring frequently so nothing sticks to the bottom of the pot.

Once the millet is cooked, stir in the reserved cup of milk and vanilla. Using an immersion blender, blend the millet until smooth and creamy, then divide into four servings. Top each serving with date syrup, chopped dates and sliced almonds. This is equally tasty warm or cold, so you do you. I also really liked this pudding for breakfast.

Jeste li već imali prilike isprobati puding od prosa? Ne? Definitivno to trebate promijeniti! Iskreno, moja su očekivanja bila dosta umjerena kada je u pitanju ovo jelo, no ono me je odmah osvojilo. Iako mislim da to nema potrebe dodatno isticati, ali kao i većina ostalih stvari na ovom blogu, i ovaj je recept jako jednostavan za pripremu.

SASTOJCI:

(Za 4 porcije / 6,05 kn po porciji / 24,21 kn za sve)

Za puding:

1 šalica prosa (3,00 kn)

2 žlice kokosovog ulja (1,00 kn)

2 šalice vode (–)

3 šalice veganskog mlijeka, podijeljene (9,00 kn)

4 žlice sirupa od datulja (1,00 kn)

½ žličice soli (0,01 kn)

1 žličica ekstrakta od vanilije (0,20 kn)

Dodatci:

4 žlice sirupa od datulja (1,00 kn)

½ šalice sjeckanih datulja (3,00 kn)

4 žlice badema u listićima (6,00 kn)

PRIPREMA:

Proso dobro isperite u cjediljci pod tekućom vodom. Preselite u čisti lonac pa lagano tostirajte na srednjoj vatri oko pet minuta, dok ne dobije blagu boju i ne zamiriši. Pazite da često miješate kako vam proso ne bi zagorilo. Dodajte u lonac kokosovo ulje, vodu, dvije šalice mlijeka, sirup od datulja i sol. Dobro sve promiješajte i pustite da proso zavrije, smanjite vatru i poklopljeno lagano krčkajte oko 25 minuta dok proso sasvim ne omekša. Također, i ovdje svako toliko sve dobro promiješajte kako se nešto ne bi uhvatilo za dno lonca.

Kada je proso gotovo, umiješajte u njega preostalu šalicu mlijeka i vaniliju. Sa štapnim mikserom sve izblendajte u kremastu teksturu i rasporedite u četiri porcije. Svakoj porciji dodajte malo sirupa od datulja, sjeckanih datulja i listića badema. Meni je ovaj puding jednako super i topao i hladan, a također mi fino paše i za doručak.
