It was the weekend and we had a few odds and ends lying around our house that I wanted to use up, but not many other fresh or fancy ingredients. Of course, you can make pretty much anything taste interesting if you spice it up and what’s spicier and more flavorful than a good old curry? This dish definitely proved that you don’t need much at all to make a delicious and hearty meal.
INGREDIENTS:
(Yields 4 servings / 0.73 EUR per serving / 2.92 EUR for all)
2 tbsp coconut oil (0.13 EUR)
1 large onion (0.10 EUR)
2 cups cooked chickpeas (0.40 EUR)
3 roasted red peppers – I used jarred (0.60 EUR)
1 can of whole peeled tomatoes (0.53 EUR)
1 tsp salt (0.01 EUR)
1 tsp freshly ground black pepper (0.07 EUR)
Good pinch of dried red pepper flakes (0.02 EUR)
1 tsp garlic powder (0.07 EUR)
1 tbsp sweet Hungarian paprika (0.07 EUR)
2 tbsp curry powder (0.27 EUR)
1 tsp turmeric powder (0.07 EUR)
1 tbsp brown sugar (0.02 EUR)
2 tbsp tomato paste (0.27 EUR)
1 bay leaf (0.03 EUR)
2 tbsp dried parsley (0.13 EUR)
2 cups of veggie broth (0.13 EUR)
METHOD:
Peel, wash and chop up the onion. Use a potato masher to lightly mash up the chickpeas. Roughly chop up the roasted peppers and canned tomatoes. Add oil and the onion to a pot on high heat and saute for about five minutes until fragrant and lightly caramelized. Dump in all of the remaining ingredients and bring to a rolling boil. Reduce heat and simmer with a lid cracked open for 30 minutes, while stirring occasionally. Also add in a splash more of water if needed. Taste and adjust seasoning and serve warm.
This curry reheats and freezes great and will taste even better on the next day.

Međutim, skoro pa sve možete napraviti ukusnim ako to dobro začinite, a što ima više arome nego dobar stari curry? Ovaj receptić je definitivno zabetonirao moje uvjerenje da vam uopće ne treba puno kako bi ste pripremili ukusan i zasitan obrok.
SASTOJCI:

2 žlice kokosovog ulja (1,00 kn)
1 veliki luk (0,75 kn)
2 šalice kuhanog slanutka (3,00 kn)
3 pečene crvene paprike – ja sam uzela kupovne iz tegle (4,50 kn)
1 konzerva pelata (4,00 kn)
1 žličica soli (0,01 kn)
1 žličica svježe mljevenog crnog papra (0,50 kn)
Dobar prstohvat sušenog čilija u pahuljicama (0,15 kn)
1 žličica češnjaka u prahu (0,50 kn)
1 žličica slatke paprike (0,50 kn)
2 žlice curry praha (2,00 kn)
1 žličica kurkume (0,50 kn)
1 žlica smeđeg šećera (0,15 kn)
2 žlice koncentrata od rajčice (2,00 kn)
1 lovorov list (0,20 kn)
2 žlice sušenog peršina (1,00 kn)
2 šalice povrtnog temeljca (1,00 kn)
PRIPREMA:
Operite, ogulite i nasjeckajte luk. Slanutak malo zgnječite gnječilicom za krumpir. Grubo nasjeckajte pečene paprike i pelate. Ulje i luk ubacite u lonac na jakoj vatri te dinstajte pet minuta da luk zamiriši i blago se karamelizira. Ubacite sve ostale sastojke u lonac te pustite da zavrije. Smanjite vatru i krčkajte sa odškrinutim poklopcem 30-tak minuta, uz povremeno miješanje. Prema potrebi dodajte i još malo vode. Kušajte i prilagodite začine, te poslužite toplo.
Ovaj se curry super podgrijava, a još je i finiji sljedećeg dana.
